Nina Ballerina made an authentic smoked salmon version of this salad with soba noodles for me, I loved it so much I made it for the coffee fairy.

This is an adapted slacker version using ingredients I had to hand

Ingredients:

2 x cakes of long life asian noodles  cooked and refreshed with cold water

2 x lebanese cucumbers halved and then sliced into thin rounds

handful fresh coriander chopped

2 x spring onion finely sliced

3 tbs soya sauce

1 tbs caster sugar

1tsp sesame oil

For Omelette

2 x large eggs

1/2 tsp mirin

1/2 tsp soya sauce

1/2 tbs sugar

Omelette:

Whisk eggs together until combined. Add mirin, soya sauce and sugar and whisk until all ingredients well combined.

Heat large oiled fry pan (30cm diameter), pour egg mix in thin layer and roll pan around to spread mix evenly. Cook  until egg mix solid (~2 min). Flip and then cook for 30sec – 1min.

Roll omelette and cut shortwise  into strips and then cut lengthwise to give you little squares of omelette.

Salad:

Put noodles in a large bowl. Mix soya sauce, sugar and sesame oil together then pour over noodles and mix till noodles coated evenly.

Combine cucumber, spring onions and coriander and mix through noodles. Mix through omelette squares.

Serves Two.

Variations

  • Use toasted sesame seeds instead of sesame oil for something more authentic
  • Substitute 4 slices of smoked salmon cut into squares instead of omelette
  • Substitute thinly sliced steak for the smoked salmon
  • Add blanched asparagus
  • Use soba or somen noodles instead of the long life noodles
